Chimere Eaton had a feeling that she was
onto something big when she started her own
dessert business, inspired by her late grandmother,
out of her home three years ago.
But it wasn’t until a flight attendant and world
traveler tasted one of Chimere’s cheesecakes
and called it the best that she had ever had
that Chimere knew that she was all in as far as
expanding her business.
“At that point I realized that my cheesecakes
were the best because they are made with
love,” Chimere said, adding that she has her
own little secrets about what goes into the
smooth crust and extra rich tasting cream for
her creations.
Shortly before coming to MDE, Chimere
had been in a transition. She had worked
for Whitman Requardt and Associates, a
Baltimore engineering firm, but wanted to
seek other opportunities. She took some time
off to teach part time at a school but she also
soon discovered that she had a passion for
pleasing a person’s sweet tooth.
That came from cooking and baking at an
early age and her grandmother showing
her how to make her vaunted sweet potato
pie. She received so many compliments and
encouraging feedback that she was inspired to
start selling her desserts. Chimere used those
lessons, and her imagination, to create a sweet
potato swirl cheesecake.
“The sweet potato swirl cheesecake is my
best seller. Now it has become homage to my
grandmother,” said Chimere, who reviews
documents and landfill plans for MDE.
Chimere started her company “ScrumDeliUmptious”

in the spring of 2013. She came up with this name by combining “scrumptious” and “delicious”
and she initially just focused on making
standard, basic cheesecakes for parties, baby
showers, birthdays and class reunions.
Her decision to focus solely on cheesecake
transpired from the saturated cake and
cupcake market. Chimere knew she would be
able to bring something different to the table.
Now, she is making seven different kinds of
cheesecake including non-traditional flavors
like banana pudding, brownie swirl and sweet
potato swirl cheesecake. Chimere’s ideas for
new innovative cheesecake recipes come from
customer requests and trial and error. She
strives to find different flavors that will match
well with her special cheesecake base. On her
menu you will also find decadent desserts
such as carrot cake, lemon bundt cake, red
bottoms, black bottoms, and banana nut bread
along with sweet potato pie, coconut pie and
cheesecake brownies.
Currently, the focal point of Chimere’s
business is delivering individual orders in
both Baltimore City and County. She also
brings her baked products to a number of
special events throughout the year. Some of
those, like an event called “Over Accessorized,
Girls Night Out,” donate some of the proceeds
to charity.
“The cheesecakes have been very well received
at this event,” Chimere said.
In the future, Chimere plans to have her
desserts shipped out of state and sold by
wholesalers, restaurants, carryouts, and
ultimately supermarkets. In five years she
hopes to see ScrumDeliUmptios on the cusp
of becoming a worldwide brand.
